Stuffed tomatoes

An excellent appetizer, which may well be an independent dish, if you want something light. Smoked tofu can be replaced with seitan or any vegan sausage. There is an alternative substitute for soy mayonnaise: chopped cashew nuts with lemon juice.

Stuffed Tomatoes: Cooking Recipe

Structure:

  • Tomatoes - 6 pcs.
  • Canned corn - 100 g.
  • Canned peas - 100 g.
  • Smoked Tofu - 100 g.
  • Fresh cucumber - 1 pc.
  • Soy mayonnaise - 50 g.
  • Dill - 1 bunch.
  • Basil - 1 branch.

Cooking:

In tomatoes, cut off the upper part, remove the middle with a spoon. Peel the cucumber, cut into small cubes. Chop dill. Cut the tofu into small cubes, combine with cucumber, corn, peas, dill and soy mayonnaise. Stir, distribute in forms - tomatoes, garnish with basil.
